As the resorts newest restaurant and designed by Adam D. Tihany, Summit's contemporary design provides a counterpoint to the classic majesty of The BROADMOOR. Summit is an American Brasserie with an eclectic, innovative wine and cocktail program. Summit has been honored in the Robb Report for "Best of the Best", and Esquire's "Best New Restaurants", along with "Best New Design".
The menu's guiding principle is American Brasserie, which starts with classical cooking techniques and adds the finest American produce found seasonally around the country. Whether it's Colorado corn in September, Nantucket Bay scallops in November, or heirloom tomatoes from the heartland in the summer, Summit's bill of fare finds strength in a vibrant nationwide network of top-shelf vendors providing the kitchen with the best possible ingredients. The menu features year-round favorites as well as ever-evolving seasonal selections.

Designed by internationally renowned architect Adam D. Tihany, with cuisine by acclaimed Executive Chef Bertrand Bouquin, Summit is an American Brasserie, with an eclectic and innovative wine and cocktail program.
The design of the restaurant theme is motion, inspired by the majesty of Pike's Peak and the Pike's Peak International Hill Climb. Wood, metal, glass, leather and fabrics are all elements used throughout the dining room that create a modern, but comfortable feeling.
Summit's private room consists of two large round tables that seat up to eleven guests per table. This provides a maximum of 22 guests seated comfortably. The semi-private table is located at the end of the dining room with an optional pull down screen. At this location, guests are still a part of the dining room atmosphere with your own comfortable space. This area consists of one large round table that seats between seven and eleven guests comfortably.
