Apprenticeship Program
The BROADMOOR’s Apprenticeship program is highly structured, consisting of over 6,000 hours of hands-on training and 575 hours of classroom instruction. Students are rotated throughout our various kitchens so they may study the classical foundations of modern cuisine. Participating students enjoy and learn from a broad scope of courses designed to prepare individuals for the challenges of today’s food service industry, while getting paid for each hour worked. This program runs six consecutive semesters over three years. Students attend classes one evening each week for five hours and receive six general education credits. All students are registered as junior members with the American Culinary Federation.
Graduates of the program will receive their Certified Cook title and are eligible to earn an Associates of Applied Science Degree. The US Department of Labor, Bureau of Apprenticeship, will issue a nationally recognized completion certificate for Journeyman Cook.
Applications for the Apprenticeship program are accepted in June and July. In addition to the application, please include your resume and a typed, 200-word essay on the topic Why I Want to be a Chef.
Externship
The BROADMOOR works closely with several national and international culinary programs and schools to sponsor students during their required externship. We work with students individually to help them meet requirements specific to their externship.
