Chefs of The Broadmoor to Host Fifth Annual Benefit Dinner

Colorado Springs, Colo. (July 14, 2010) - The Broadmoor's culinary team is proud to announce the Fifth Annual "Taste of The Broadmoor" Benefit Dinner to be held September 21, 2010, at Charles Court restaurant. Benefiting The Broadmoor's Culinary Apprenticeship Program and the Colorado Restaurant Association's ProStart Program, the five-course dinner is a celebration of the culinary industry and the next generation of great chefs. The evening will feature epicurean creations by star-studded line-up that includes The Broadmoor's Executive Chef Siegfried "Sigi" Eisenberger, Summit's Chef Bertrand Bouquin, Penrose Room's Chef Justin Miller, Charles Court's Chef Greg Barnhill, and Executive Restaurant Pastry Chef Rémy Fünfrock. Wine Director Tim Baldwin will pair all courses exquisitely with Old and New World wines.

"Supporting our local culinary students and the Colorado Restaurant Association is an important way to encourage both students and members of the industry to continue pursuing their passion for great food," says C. "This is a very special evening for the culinary team, it's their chance to blend the styles and flavors found within all of The Broadmoor's food and beverage offerings into one extraordinary dinner!"

Cost for the dinner is $150.00 per person and includes the welcome reception and wine pairings. Tickets can be purchased by calling Dining Reservations at 719.577.5733. The evening begins with cocktails at 6:00 p.m. Dinner to follow at 6:45 p.m.

The Broadmoor's Culinary Apprenticeship Program

The highly structured Broadmoor culinary apprenticeship program consists of over 6,000 hours of hands-on training and 575 hours of classroom instruction. Students rotate throughout the various kitchens to study the classical foundations of modern cuisine. Students enjoy and learn from a broad scope of courses designed to prepare them for the challenges of today's food service industry, all the while getting paid for each hour worked. This program runs six consecutive semesters over three years. Students attend classes one evening each week for five hours and receive six general education credits. All students are registered as junior members with the American Culinary Federation. Graduates of the program receive their Certified Cook title and are eligible to earn an Associates of Applied Science Degree. The U.S. Department of Labor, Bureau of Apprenticeship, also issues a nationally recognized completion certificate for Journeyman Cook.

Colorado Restaurant Association's ProStart Program

The ProStart Program is a hospitality education program for high school students facilitated by the Colorado Restaurant Association and the Colorado Hotel & Lodging Association.   ProStart is a two-year foodservice and hospitality management curriculum offered to high school juniors and seniors. A nationally certified education program, by the National Restaurant Association Educational Foundation, ProStart is a competency-based study of food preparation, lodging, customer service, and business management, coupled with industry-mentored internships in a broad spectrum of operations. The program has expanded from 22 to 30 participating high schools and involves more than 650 students in Colorado alone. The ProStart program currently provides for high school and college academic credit through the ProStart Post Secondary Passport, scholarships, and employment opportunities.
