Culinary Apprenticeship

Unlike other culinary programs, students in The Broadmoor's Culinary Apprenticeship Program are actual employees who get paid for their hours of work at our resort, in addition to working towards a degree from Red Rocks Community College. Five kitchen classroom hours a week are completed at Red Rocks Community College where students learn about food safety, nutrition and management. At the program's completion, each chef will have dedicated more than 6,000 hours to the program, rotating to every Broadmoor dining venue, including all ten restaurants, as well as taking on catering and banquet services.

This program runs six consecutive semesters over three years, with an optional fourth year in Baking and Pastry. Students attend classes one evening each week for five hours and receive six general education credits. All students are registered as junior members with the American Culinary Federation.

Chefs who complete the program receive a Certified Cook title from American Culinary Federation (ACF), a Journeyman Cook certificate from the U.S. Department of Labor, Bureau of Apprenticeship, a ServSafe certificate for sanitation, a certificate in nutrition recognized by the National Restaurant Association, and a foodservice management certificate also recognized by the ACF.

Applications for the Apprenticeship program are accepted in June and July. Please bring your resume and a typed, 200-word essay on the topic Why I Want to be a Chef, to your initial interview. The program begins each August .
